Eagle watching

Eagle watching along the Illinois River this time of year is at it's peak.  Many times during trips to Peoria, we have counted 10 to 20 bald eagles perched in the trees along the river.  When crossing the bridge at Lacon or Henry, many bald eagles can be spotted in the trees.

Snowman building contest

Mission Oak Inn Snowman/woman contest

Illinois ice fishing

We have a new ice fishing package available that includes a minimum of two hours of guided ice fishing on our private lake with equipment and bait provided, two nights stay that includes our deluxe breakfast each morning, and our picnic basket dinner for two to enjoy in your suite one evening.  The weekend price is $409 plus tax, weeknight price is $389 plus tax.

Easy Chocolate Cookie Recipe

Chocolate Truffle Cookies

4 squares (1 oz each) unsweetened chocolate
2 cups (12 oz each) semi-sweet chocolate chips, divided
1/3 cup butter or margarine
1 cup sugar
3 eggs
1 1/2 tsp vanilla extract
1/2 cup all-purpose flour
2 T baking cocoa
1/4 tsp baking powder
1/4 tsp salt
Confectioners' sugar

In a microwave or double boiler, melt unsweetened chocolate, 1 cup of chocolate chips, and butter; cool for 10 minutes.  In a mixing bowl, beat sugar and eggs for 2 minutes.  Beat in vanilla and the chocolate mixture.  Combine flour, cocoa, baking powder, and salt; beat into chocolate mixture.  Stir in remaining chocolate chips, cover, and chill for at least 3 hours.  Remove about 1 cup of dough.  With lightly floured hands, roll into 1 inch balls.  Place on ungreased baking sheets.  Bake at 350 degrees for 10-12 minutes or until lightly puffed and set.  Cool on pan 3-4 minutes before removing to a wire rack to cool completely.  Repeat with remaining dough.  Dust with confectioners' sugar.
