Cinnamon Quick Bread

Cinnamon Quick Bread
4 cups all-purpose flour
2 cups sugar, divided
2 tsp baking soda
1 tsp salt
2 eggs
2 cups buttermilk
1/2 cup canola oil
3 tsp ground cinnamon
1 tsp vanilla

In a large bowl, combine the flour, 1 1/2 cups sugar, soda and salt.  In a small bowl, whisk the eggs, buttermilk, and oil.  Stir into dry ingredients just until moistened.  Combine cinnamon and remaining sugar; set aside.  Spoon half of the batter into two greased 8-in. x 4-in. loaf pans.  Sprinkle with half of the reserved cinnamon-sugar; repeat layers.  Cut through batter with a knife to swirl.  Bake at 350 degrees for 55 to 60 minutes or until a toothpick inserted near the center comes out clean.  Cool in pans for 10 minutes before removing from pans to wire racks.
