Baked Oatmeal recipe

3 cups quick-cooking oats
1 cup packed brown sugar
2 tsp baking powder
1 tsp salt
1 tsp ground cinnamon
2 eggs
1 cup milk
1/2 cup butter, melted
Additional milk

In a large bowl, combine the oats, brown sugar, baking powder, salt, and cinnamon. In another bowl, whisk the eggs, milk, and butter. Stir into oat mixture until blended. Spoon into a greased 9-inch square baking pan. Bake at 350 degrees for 40-45 minutes or until set. Serve warm with milk.

Cranberry Cheesecake recipe

1 cup sugar
2 T cornstarch
1 cup cranberry juice
1 1/2 cup fresh or frozen cranberries

In a saucepan, combine the above ingredients; bring to a boil. Reduce heat; cook and stir over medium heat for 2 minutes. Remove from the heat; set aside.

Crust
1 cup graham cracker crumbs (about 14 squares)
3 T sugar
3 T butter, melted

In a small bowl, combine cracker crumbs and sugar; stir in butter. Press onto the bottom of a greased 9-inch springform pan. Bake at 325° for 10 minutes. Cool on a wire rack.

Filling
4 pkg (8 oz each) cream cheese, softened
1 cup sugar
3 T all-purpose flour
4 eggs
1 cup eggnog
1 T vanilla extract

In a mixing bowl, beat cream cheese and sugar until smooth. Add flour and beat well. Add eggs; beat on low just until combined. Add eggnog and vanilla; beat just until blended. Pour two-thirds of the filling over crust. Top with half of the cranberry mixture (cover and chill remaining cranberry mixture). Carefully spoon remaining filling on top. Bake at 325° for 60-70 minutes or until center is almost set. Cool on a wire rack for 10 minutes. Carefully run a knife around edge of pan to loosen; cool 1 hour longer. Refrigerate overnight. Remove sides of pan. Spoon remaining cranberry mixture over cheesecake.

Apple Brownie recipe

1 cup sifted all-purpose flour
1 tsp baking powder
1/4 tsp salt
1/4 tsp ground cinnamon
1/4 cup butter, melted
1/2 cup packed brown sugar
1/2 cup white sugar
1 egg
1 tsp vanilla extract
1/2 cup chopped apple
2 tablespoons white sugar
2 tsp ground cinnamon
1/2 cup finely chopped walnuts (optional)

Preheat oven to 350 degrees F. Grease an 8 x 8 inch pan. Sift together flour, baking powder, salt, and 1/4 tsp of cinnamon; set aside. In a large bowl, mix together melted butter, brown sugar, and 1/2 cup of white sugar with a wooden spoon until smooth. Stir in the egg and vanilla. Blend in the flour mixture until just combined, then stir in the apples and walnuts. Spread the mixture evenly into the prepared pan. In a cup or small bowl, stir together the remaining cinnamon and sugar; sprinkle over the top of the bars. Bake for 25 to 30 minutes in preheated oven; finished bars should spring back when lightyly touched. Cool in the pan, and cut into squares. Serve warm topped with ice cream and drizzled with caramel.

Cinnamon Quick Bread

Cinnamon Quick Bread
4 cups all-purpose flour
2 cups sugar, divided
2 tsp baking soda
1 tsp salt
2 eggs
2 cups buttermilk
1/2 cup canola oil
3 tsp ground cinnamon
1 tsp vanilla

In a large bowl, combine the flour, 1 1/2 cups sugar, soda and salt. In a small bowl, whisk the eggs, buttermilk, and oil. Stir into dry ingredients just until moistened. Combine cinnamon and remaining sugar; set aside. Spoon half of the batter into two greased 8-in. x 4-in. loaf pans. Sprinkle with half of the reserved cinnamon-sugar; repeat layers. Cut through batter with a knife to swirl. Bake at 350 degrees for 55 to 60 minutes or until a toothpick inserted near the center comes out clean. Cool in pans for 10 minutes before removing from pans to wire racks.

Baked Pancake

Pumpkin Apple Baked Pancake
1 1/2 cup dry pancake mix
1 tsp pumpkin pie spice
1 egg
3 T vegetable oil
1/2 cup canned pumpkin
1/2 tsp vanilla extract
1 cup water
3 T butter, melted
3 T brown sugar
2 cups peeled, cored, and sliced Granny Smith apples
1/2 tsp ground cinnamon
1/2 cup chopped pecans
3 T maple syrup

Blend first 7 ingredients together and set aside. Pour melted butter in 9-inch pie plate. Arrange apple slices to cover the bottom of the pie plate. Sprinkle with cinnamon, brown sugar, and pecans, and drizzle syrup over the apples. Carefully pour the batter on top. Bake at 350° for 30-35 minutes or until the top springs back when touched. Loosen the edges and invert onto a serving plate. Cut in wedges and serve with warm maple syrup or caramel sauce.

Caramel Sauce
1/2 tsp vanilla
1/4 cup butter
1/2 cup brown sugar
1/2 cup heavy cream

Melt butter, add brown sugar, cream and simmer stirring till mixture thickens. Remove from heat and add vanilla.

4 squares (1 oz each) unsweetened chocolate
2 cups (12 oz each) semi-sweet chocolate chips, divided
1/3 cup butter or margarine
1 cup sugar
3 eggs
1 1/2 tsp vanilla extract
1/2 cup all-purpose flour
2 T baking cocoa
1/4 tsp baking powder
1/4 tsp salt
Confectioners' sugar

In a microwave or double boiler, melt unsweetened chocolate, 1 cup of chocolate chips, and butter; cool for 10 minutes. In a mixing bowl, beat sugar and eggs for 2 minutes. Beat in vanilla and the chocolate mixture. Combine flour, cocoa, baking powder, and salt; beat into chocolate mixture. Stir in remaining chocolate chips, cover, and chill for at least 3 hours. Remove about 1 cup of dough. With lightly floured hands, roll into 1 inch balls. Place on ungreased baking sheets. Bake at 350 degrees for 10-12 minutes or until lightly puffed and set. Cool on pan 3-4 minutes before removing to a wire rack to cool completely. Repeat with remaining dough. Dust with confectioners' sugar.

There is the coffeE cup in Henry which has great coffee, other drinks, lunches, and gifts. Julie's Corner Store in Lacon has the best fudge, wonderful gifts, and a wine tasting room. These are just a few of the things to do when you visit our B&B.

Cinnamon Bun Pie recipe

17 oz pkg of refrigerated flaky biscuits (8 biscuits worth)
3/4 c. plus 2 T butter (about 1 and 3/4 sticks), melted
1 c. chopped pecans
1/2 c. sugar
1 T ground cinnamon

Preheat the oven to 375° F. Coat the bottom of a 9-inch deep-dish pie plate with 2 tablespoons melted butter; set aside. In a small bowl, combine the pecans, sugar, and cinnamon; mix well. Sprinkle 1/4 of the pecan mixture over the bottom of the pie plate. Place the remaining 3/4 cup melted butter in a small bowl. Separate each biscuit into 3 layers. Dip the biscuit pieces one at a time in the melted butter, coating each piece thoroughly. Layer 8 biscuit pieces in the bottom of the pie plate, completely covering the pecan mixture. Repeat the pecan mixture and biscuit layers 2 more times. Top with the remaining pecan mixture and drizzle with any leftover melted butter. Bake for 20 to 25 minutes, or until the biscuits are golden and cooked through. Allow to cool for 10 minutes, then invert onto a serving platter and slice into wedges. Serve warm.

Smoked Sausage Quiche

3 c regular tater tots
20-25 little smoked sausages, cooked until lightly browned
1 1/2 c shredded sharp cheddar cheese
1 T chopped fresh chives or green onion
8 large eggs
1/2 c sour cream
salt and pepper to taste

Preheat oven to 400°. Place potatoes in 9 inch glass pie plate and bake for 20 minutes. Remove, reduce oven to 350°. Cool enough to mash potatoes into a thin crush on bottom and up sides of pie plate. Arrange sausage over crust, then top with 1 cup of cheese. Mix remaining ingredients and carefully pour into crust. Bake at 350° for 25 to 30 minutes or until center is set. Sprinkle remaining 1/2 cup shredded cheese on top and let melt. Cut into wedges and serve.

Recipe for Eggs Florentine

4 slices bacon, cooked and chopped
8 eggs
12 oz cottage cheese
8 oz cream cheese, softened
8 T melted butter
8 oz sour cream
2 T flour
2 c Monterey Jack cheese, shredded
1 c fresh spinach, chopped

Mix the first 7 ingredients well. Wash the spinach well and chop coarsely. You may prefer to leave the leaves whole if they are small. Fold the cheese and spinach into the egg mixture. Pour into a greased 13x9 glass baking dish. Bake at 350° for 30-40 minutes until a knife inserted in the middle comes out clean. Sprinkle additional Monterey jack cheese on top just before serving. Serve hot.

Easy Cinnamon Rolls Recipe

Here is the recipe for small "Jumer's" like cinnamon rolls

1 pkg dry yeast
1 T sugar
1/4 c lukewarm water
1 stick butter, melted
3 c Bisquick
1/2 c water
sugar/cinnamon mixture (1/2 c sugar & 1 tsp cinnamon)
Mix sugar and warm water. Add yeast and let rise 5 minutes. Add Bisquick and water. Mix and form a soft ball. Divide into 4 sections. Roll each section to 4x12 inch. Brush with melted butter, sprinkle with cinnamon/sugar mixture. Roll up lengthwise. Put on buttered 11x17 pan and cut into 1 inch rolls, (do not turn over). Brush butter on top and sprinkle with cinnamon/sugar mixture. Bake at 350 degrees for 15-20 minutes.

If the dough is a little sticky, add more Bisquick.

Eagle watching along the Illinois River this time of year is at it's peak. Many times during trips to Peoria, we have counted 10 to 20 bald eagles perched in the trees along the river. When crossing the bridge at Lacon or Henry, many bald eagles can be spotted in the trees.

Spread cream cheese in an ungreased shallow 1 quart baking dish. Layer with chicken, buffalo wing sauce, and ranch dressing. Sprinkle with cheese. Bake, uncovered, at 350 degrees for 20 to 25 minutes or until cheese is melted. Serve warm with tortilla chips. Yields about 2 cups

Easy Sweet Potato Casserole

This recipe is a favorite of ours for Thanksgiving.

Sweet Potato Casserole

Casserole:
3 cups hot sweet potatoes mashed
1/3 cup milk
1/2 cup butter or margarine
1/2 cup white sugar
1/2 cup brown sugar
2 eggs
1 T. vanilla
1/4 tsp cinnamon

Topping:
1 cup light brown sugar
1/2 cup plain flour
1/3 cup butter or margarine (not melted)
1 cup pecans, chopped
1/4 tsp cinnamon

Mix ingredients for casserole and pour into 9 x 13 x 2 baking dish. Mix topping with fork and sprinkle crumbs on top of the casserole. Bake uncovered at 350 degrees for about 25 minutes.

Swiss Cheese Spread

1 tsp bistro sauce, or dijon mustard
1/2 tsp Penzey's chip & dip seasoning or substitute garlic powder to taste
1 green onion, chopped

Mix all ingredients except cheese. Stir in cheese and refrigerate for at least one hour. Serve with crackers.

Pumpkin Apple Baked Pancake

1 1/2 cups dry pancake mix                                        3 T. butter, melted
1 tsp pumpkin pie spice                                              3 T. brown sugar
1 egg                                                                         2 cups peeled, cored, and sliced Granny Smith apples
3 T. vegetable oil                                                       1/4 tsp ground cinnamon
1/2 cup canned pumpkin                                           1/2 cup chopped pecans
1/2 tsp vanilla extract                                                 3 T. maple syrup
1 cup water

Blend first 7 ingredients together and set aside. Pour melted butter in 9-inch pie plate. Arrange apple slices to cover the bottom of the pie plate. Sprinkle with cinnamon, brown sugar, and pecans, and drizzle syrup over the apples. Carefully pour the batter on top. Bake at 350° for 30-35 minutes or until the top springs back when touched. Loosen the edges and invert onto a serving plate. Cut in wedges and serve with warm maple syrup or caramel sauce.

We use this caramel sauce as a topping with bananas over our stuffed french toast, drizzled over peach cobbler, ice cream, or apple slices.
Caramel Sauce
1/2 cup butter (no substitutions)
1 cup brown sugar
2/3 cup whipping cream

In a small saucepan, melt butter. Add the brown sugar; whisk until combined and thickened (about 2 minutes). Whisk in the whipping cream, until thoroughly blended (2 more minutes).

White Chocolate Cheesecake recipe

Our favorite summertime cheesecake is the White Chocolate Cheesecake because only the crust needs to be baked. Here is the recipe

White Chocolate Cheesecake with Raspberry Sauce

Crust
6 T. chilled butter, cubed
1 c. plus 2 T. flour
2 T. sugar
1 large egg yolk
1 T. plus 1 tsp. cold water

Chocolate Ganache Layer
9 oz. bittersweet chocolate, chopped into small pieces
3/4 c. heavy whipping cream

White Chocolate Filling
19 oz. white chocolate, chopped into small pieces
11 T. butter, softened
3/4 c. sugar
3 pkg (8 oz. each) cream cheese, softened
2 T. dark rum

Raspberry Sauce
1/3 c. sugar
1 pkg. (10 oz.) unsweetened frozen raspberries, thawed and undrained
1 T. cold water
1 1/2 tsp. cornstarch

Preheat oven to 350°. Using a food processor or pastry blender, cut butter into flour and sugar. Add egg yolk and cold water; process until well combined. Press mixture into bottom of an ungreased 9 inch springform pan. Bake 20 minutes. Remove from oven and cool completely. While crust is cooling, melt bittersweet chocolate and whipping cream together in the top pan of a double boiler; stir until smooth. Spread over cooled crust and chill. In the top pan of a double boiler, melt white chocolate until it becomes a soft mass; set aside. In a large mixing bowl, beat butter until creamy with electric mixer on medium speed. Add sugar and continue beating 2-3 minutes. Scrape down sides of bowl and add cream cheese, one third at a time. Beat in rum. Slowly beat in softened white chocolate; increase speed and beat until creamy. Pour over chocolate ganache layer and gently spread to edge of pan. Cover with plastic wrap and refrigerate overnight. For sauce, bring sugar and raspberries to a boil in a heavy saucepan, stirring often. Mix together water and cornstarch; stir into raspberries. return mixture to a boil and cook for 1 minute, stirring constantly. Remove from heat and cool. Serve individual pieces of cheesecake topped with Raspberry Sauce.

There will be a three day hot air balloon festival in Chillicothe July 16-18. It's called Balloons at the Park and will be held at Three Sisters Park. We have a new glider and table and chairs for the deck that overhangs the lake. The table and chairs are the 'bar style' with higher chairs that allow us to see over the railing. They swivel to get a 360 degree view of the lake. The new glider allows us to sit next to our honey while watching the lake happenings! The former deck table and chairs are now at the fire pit and the bench that was replaced by the glider is on the point at a place that has a great view of the sunset over the lake.

Bird sighting

We are enjoying bird sightings. This morning the first family of geese with their goslings showed up. We think they were probably hatched at the neighbors pond since we had not seen the male guarding and the bird book says they sit on their eggs for 25 to 28 days.

This afternoon I saw the first male hummingbird visit the feeder in front of the house.

There is also a robin sitting on her nest in a tree close to the deck that overhangs the lake. We have the spotting scope fixed on her so we can see when the eggs hatch.

Bass Fishing Report

Bass fishing in the spring can be exciting. According to Jeff Lampe of the 'Peoria Journal Star', spring is a time when the big bass are vulnerable. He advises using a jig and pork trailer, however in late April swim baits like lizards or big tubes work well in early morning or late afternoon.

Here at Mission Oak Inn, the biggest bass that has been caught is six and a half pounds and that was almost three years ago for the first one and several more have been caught. Since then many a line has been broken and our guests report having a monster on their line only to have it broke and the fish get away. We are anxiously awaiting an 8, 9, or maybe even a 10 pounder since they have grown about a pound or more a year since they were stocked in 2001. We offer fishing on our private lake for our guests with no fishing license required.

Find Morel Mushrooms

Morel mushroom season is here, they are so good, and they can be found in wooded areas here at Mission Oak Inn. The best place to find morel mushrooms is around a dead and decaying elm tree. Denny has found some growing out of the side of a steep bare bank where he had to slide down and try to grab them as he went past. That's dedication!

Henry, Illinois has been the home of the Morel Festival for a few years but not this year. We are hoping that it will be back next year. More interesting facts can be found on this website http://thegreatmorel.com/

Spring is still showing it's colors

Spring and Easter always seem to go hand in hand and this year it seems to be very much so. With the rain that we received last night, the grass is very green and pretty. We continue to see bulbs pop up and color the landscape. We are seeing a pair of wood ducks almost daily out on the lake. We are hoping they build a nest in the box that is at the other end of the lake.

Spring is arriving, the bulbs are starting to come up and the lake thawed out last weekend. We are starting to see the migrating ducks such as Bufflehead, Goldeneye, Greater and Lesser Scaup, Hooded and Red Breasted Merganser, Ring Neck, Northern Shoveler, Wood Duck, and others. We never know which ones we will have each day. It's fun to watch and record which ones visit. The Canadian geese are out there too, trying to establish their nesting territory.

Last Monday evening we went out fishing to catch some crappie for dinner. We caught enough in no time at all. My first one was the largest at 1 lb and 3 oz. We only had to keep five to make two meals. I also caught a 3 lb walleye. Here are the photos. Jan

I have tried several times to get a good photo of a hummingbird moth. I usually only see them at dusk when the light isn't very good and they move around a lot. The other morning while sitting at the office desk, I noticed this one in the bee balm out front. I grabbed the camera and tried to take as many shots as I could. I think this one came out the best.

Last week after breakfast we were visiting with our guests and we all heard a couple of little thuds on the window. I got up to look and two hummingbirds were laying on the porch. They had hit the window are were stunned. Denny went out to check on them and one flew away but the other one was still stunned so Denny picked him up until he regained his strength. We have placed an order for a mini pontoon boat that we think will be excellent for fishing. Here is a photo but ours will have swivel seats mounted on the deck.

Effective April 1, 2009, we will start charging a minimal fee for the use of the fishing boat and motor. Canoes are still available at no charge. This should help defray the cost of buying a new battery every two years.

Pumpkin Praline Cheesecake from Mission Oak Inn

Crust:
1 pkg butter recipe cake mix
1/2 c. softened butter or margarine

Heat oven to 325°. Combine cake mix and butter in large bowl, mixing at low speed until crumbly. Set aside 1 cup of mixture for topping. Press remaining mixture in bottom and 1 1/2 inches up sides of ungreased 10 inch springform pan.

Filling:
3 pkg. (8 oz each) cream cheese, softened
1 c. packed brown sugar
1 can (15 oz) solid-pack pumpkin
2 T. cornstarch
1 1/4 tsp. ground cinnamon
1/2 tsp. nutmeg
1/4 c. evaporated milk
3 eggs
1 tsp. vanilla extract

In a mixing bowl, beat cream cheese and brown sugar until smooth. Add the pumpkin, cornstarch, cinnamon, and nutmeg; mix well. Gradually beat in milk, eggs, and vanilla just until blended. Pour into crust. Sprinkle the topping evenly over filling. Place pan on a baking sheet. Bake at 325° 70-80 minutes or until center is almost set and topping is golden brown. Remove from oven and drizzle caramel topping over top. Bake for 8-10 minutes more to set topping. Cool 30 minutes. Run knife around sides of pan to loosen. Cool completely. Remove sides of pan and refrigerate 4-5 hours or overnight. Store in refrigerator.

Topping
1/2 c. packed brown sugar
1 c. chopped pecans
1/3 c. caramel topping
reserved mixture from crust

In a small bowl combine reserved crumb mixture, brown sugar, and pecans; blend well. Drizzle with additional caramel when serving.

Fishing report

During the summer months, the lake dropped a few inches but with the record rainfall in September, it's full again. The water is cooling off and the crappie are biting. Guests are also catching a lot of bass on lots of different baits. They have also caught a few walleyes. Some big red ears (close to 1 pound) are being caught on worms.

Here it is almost the end of September and the weather is still gorgeous. It's supposed to turn cooler next week but it's wonderful now.

The resident hummingbirds and swallows have left. We are seeing migrating hummers now and enjoying them before it gets too cold here for them. At the suggestion of someone in a magazine, we have changed the ratio of the sugar water recipe to 4 parts water and 2 parts sugar for an extra energy boost. Usually the ratio is 4 parts water and one part sugar. The hummers have to fly a long way to get to their winter home in Mexico and South America.

Catfish are biting on worms and 'stink bait' and averaging 4 lbs. Bass have been hitting plastics and top water (like scum frogs) with a lot of 3 to 4 lb. fish. Crappie are starting to bite on worms and small jigs (we do not allow minnows). A couple of walleye have been caught on crank baits.

4 cups peeled and sliced fresh or frozen peaches, thawed
1 1/2 cups sugar, divided
1/2 tsp almond extract
1/2 cup butter, melted
3/4 cup all-purpose flour
2 tsp baking powder
1/4 tsp cinnamon
pinch nutmeg
pinch salt
3/4 cup milk
vanilla ice cream, optional

In a bowl, gently toss peaches, 1 cup of sugar, and almond extract; set aside. Pour melted butter into a 2-quart baking dish. In a bowl, combine flour, baking powder, cinnamon, nutmeg, salt, and remaining sugar; stir in milk. Mix well. Pour evenly over butter (do not stir). Top with peach mixture. Bake at 350 degrees for 50-55 minutes or until golden brown. Serve with ice cream if desired.

If you are depending on your GPS to get you to Mission Oak Inn, you may be directed somewhere else. We haven't been here very long and out here in the country, things don't get updated very often. We have a map on our website with detailed directions. You can also get directions from Google Maps, but not Mapquest.

Also, all of our nice reflective metal signs with our logo have been stolen for the metal, so now we have small signs with just our name. Look for the sign for 930E from Camp Grove Road and then you will probably see our small sign and after turning onto 930E, our lane is only about 1/2 mile. We are sorry for the inconvenience but the nice reflective signs are too expensive to keep replacing.

Buzzed by the cropduster

In the last few weeks, the cropduster has been busy nearby dusting the fields for the Japanese beetles. We really have a lot of them and they are really wreaking havoc on the farm crops. Several times as they have dusted nearby crops we have been buzzed. Just the other night when he was dusting our field right in front of the house, our guests got a video of him. He looked like he was going to hit the tree tops! Most of my photos didn't come out well because he's just too fast for me. This photo looks like he is sitting on top of the bean field because he was in a low spot.

Pileated Woodpecker

This morning as I was working in the office I saw a Pileated Woodpecker land on a tree trunk in the front of the house. It wasn't very close but it was close enough to know it was a Pileated Woodpecker. We have seen one before but it's very rare since they stay in the deep woods most of the time. I wasn't quick enough to get a photo but I'll keep trying if I see him again.

Denny bought some catfish food and we started feeding the catfish over the weekend. It didn't take long to have the 'regulars' hanging around the deck where we feed them. The regulars include the albino catfish that Jan named 'Albee'.
